Barbecued Picnic Chicken
Ingredients
- 2 garlic cloves, minced
- 2 teaspoons butter
- 1 cup ketchup
- 1/4 cup packed brown sugar
- 1/4 cup chili sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon celery seed
- 1 tablespoon prepared mustard
- 1/2 teaspoon salt
- 2 dashes hot pepper sauce
- 2 broiler/fryer chickens (3-1/2 to 4 pounds each), cut up

- In a large saucepan, saute garlic in butter until tender. Add the next 8 ingredients. Bring to a boil, stirring constantly. Remove from the heat; set aside.

- On a lightly greased grill rack, grill chicken, covered, over medium heat for 30 minutes, turning occasionally. Baste with sauce. Grill 15 minutes longer or until a thermometer reaches 170°, basting and turning several times.
Big John’s Chili-Rubbed Ribs
Ingredients
- 3 tablespoons packed brown sugar
- 2 tablespoons paprika
- 2 tablespoons chili powder
- 3 teaspoons ground cumin
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 6 pounds pork baby back ribs
- GLAZE:
- 1 cup reduced-sodium soy sauce
- 1 cup packed brown sugar
- 2/3 cup ketchup
- 1/3 cup lemon juice
- 1-1/2 teaspoons minced fresh gingerroot
- Chopped fresh parsley, optional

- Mix the first 6 ingredients; rub over ribs. Refrigerate, covered, 30 minutes.

- 1/2 cup ketchup
- 1/4 cup packed brown sugar
- 1/4 cup white vinegar
- 1/4 cup orange juice
- 1/4 cup Worcestershire sauce
- 2 garlic cloves, minced
- 1/2 teaspoon dried rosemary, crushed
- 8 bone-in pork loin chops (3/4 inch thick and 7 ounces each)

- In a small bowl, mix the first seven ingredients. Pour 3/4 cup marinade into a large bowl. Add pork chops; turn to coat. Cover and refrigerate 8 hours or overnight. Cover and refrigerate remaining marinade.

- 1 bone-in pork shoulder roast (8 to 10 pounds)
- Applewood chips or pellets
- 3 tablespoons spicy brown mustard
- 1/4 cup All-Purpose Meat Seasoning or favorite spice rub
- 1/3 cup apple cider or juice
- 3 tablespoons cider vinegar

- Let roast stand at room temperature for 1 hour. Preheat smoker to 275°. Add wood chips or pellets to smoker according to manufacturer’s directions.

- Trim excess fat from pork, leaving some exterior fat. Pat roast dry; rub with mustard and sprinkle with spice rub. Place pork in smoker. In a spray bottle, combine apple cider and vinegar; lightly spritz pork. Smoke, spritzing pork every hour, until pork reaches 165° and is a dark brown color, about 5 hours.
- Transfer pork to a 13×9-in. baking pan or large cast iron skillet; liberally spritz with cider mixture. Cover tightly with foil and return to smoker. Grilled Glazed Drummies

- 1 cup ketchup
- 1/3 cup reduced-sodium soy sauce
- 4 teaspoons honey
- 3/4 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 3 pounds fresh or frozen chicken drumettes, thawed
- Optional: Sliced green onions and ranch dressing

- 12 bone-in country-style pork ribs (about 7 pounds)
- SAUCE:
- 2 tablespoons canola oil
- 1 medium onion, finely chopped
- 1 cup tomato sauce
- 1/3 cup dark brown sugar
- 1/4 cup ketchup
- 1/4 cup molasses
- 1 tablespoon apple cider vinegar
- 2 teaspoons Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon ground mustard
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper

- In a small bowl, mix brown sugar and seasonings; sprinkle over ribs. Refrigerate, covered, at least 1 hour.

- 1-1/2 teaspoons Worcestershire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon liquid smoke
- 1/8 teaspoon pepper
- BURGERS:
- 1 large egg, lightly beaten
- 1/3 cup quick-cooking oats
- 1/4 teaspoon onion salt
- 1/4 teaspoon garlic salt
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1-1/2 pounds ground beef
- 6 hamburger buns, split
- Toppings of your choice

- In a small saucepan, combine the first 10 ingredients. Bring to a boil. Remove from the heat. Set aside 1 cup barbecue sauce to serve with burgers.
